It’s been pretty cold and cloudy here the past few days, which means it’s the perfect time for comfort food. Emily and I made French onion soup for dinner and spent the evening watching old episodes of The Office. Quite a cozy evening.
3 onions, thinly sliced / 1/4 c. butter / 20 oz. beef broth / 1 c. water / 1/2 c. dry white wine / 1/4 t. salt / 1/2 t. cayenne pepper / 1/2 t. white pepper / 6 slices of French bread, toasted / 2 c. swiss cheese, grated
In a 3-quart pot, combine butter and onions. Cover and sauté until onions are tender. Stir in broth, water, wine, salt, cayenne, and pepper. Simmer for 10 minutes. Top with slices of bread and shredded cheese. Bake until the cheese is melted.
